The result is spawn that breaks apart cleanly when you shake the jar and when you spawn to bulk: more inoculation points per kilogram and a faster, more even run. It also supplies calcium and sulfur, two macroelements the mycelium uses in protein synthesis (sulfur amino acids) and in cell-wall structure.\u003c\/p\u003e\n\u003cp\u003eCalcium carbonate. Alkaline buffer. As mycelium colonizes it releases organic acids and the pH of the grain drifts downward; calcium carbonate neutralizes that drift progressively and holds the pH inside the working range of the mycelium for the whole run instead of letting it slide into the acidic zone that slows growth. It is also a secondary calcium source.\u003c\/p\u003e\n\u003cp\u003eBrewer’s yeast. Source of organic nitrogen, free amino acids, B-group vitamins (thiamine, riboflavin, niacin, biotin) and minerals in bioavailable form. Thiamine in particular is a cofactor many basidiomycetes cannot synthesize and must find in the substrate. In grain spawn the yeast works as a starter: it shortens the lag phase after inoculation and supports a denser mycelium in the first days.\u003c\/p\u003e\n\u003cp\u003eDextrose. Simple sugar, metabolized immediately without the enzymatic breakdown starch requires. It gives the mycelium energy that is available from the first hours, when the inoculum is still a few points on a large surface. The dose is deliberately contained: the bulk of the carbon remains the grain starch, so free sugars never reach a level that favours contaminants.\u003c\/p\u003e\n\u003ch3\u003eProtocol\u003c\/h3\u003e\n\u003col\u003e\u003cli\u003eSoak, pre-cook if that is your method, and drain the grain exactly as you normally do, to the moisture level you normally work at.\u003c\/li\u003e\u003cli\u003eDose: 25 g per kg of dry grain (grain weight before soaking). Weigh the powder on a kitchen scale.\u003c\/li\u003e\u003cli\u003eAdd the powder to the drained, still-damp grain and mix until evenly distributed.
