As mycelium colonizes it releases organic acids and the pH of the grain drifts downward; calcium carbonate neutralizes that drift progressively and holds the pH inside the working range of the mycelium for the whole run instead of letting it slide into the acidic zone that slows growth. It is also a secondary calcium source.\u003c\/p\u003e\n\u003cp\u003eBrewer’s yeast. Source of organic nitrogen, free amino acids, B-group vitamins (thiamine, riboflavin, niacin, biotin) and minerals in bioavailable form. Thiamine in particular is a cofactor many basidiomycetes cannot synthesize and must find in the substrate. In grain spawn the yeast works as a starter: it shortens the lag phase after inoculation and supports a denser mycelium in the first days.\u003c\/p\u003e\n\u003cp\u003eDextrose.
